Atta Flour

Also known as ‘light wholemeal’ or ‘sifted wheat’ flour. This is made from Australian ‘heritage’ heirloom hard wheat, varieties exclusively from Eden Valley, and has been sifted around 15% of the coarsest bran and germ. It has a bit more nutrition and flavour and is a little denser in texture, can be used as per ‘Bakers’ flour.

Also known as ‘wholegrain’ flour. This is a stoneground wheat flour made from 100% ‘heritage’ heirloom hard wheat grain, retaining all the nutrients and flavour found in the bran and germ. Similar use to ‘Bakers’ flour but giving a much denser and chewier texture.

Also known as bran reduced wholewheat flour, atta flour or unbleached flour.  Derived from the 100% wholewheat flour, about half the bran is removed leaving approximately 85% of the original whole grain.  This makes a finer textured dough and is suitable for lighter cakes, pastries, pasta, biscuits, pancakes.  It is fantastic for making bread in bread machines – just use the wholemeal recipe that came with your machine.

Millet seed – is enclosed in a coloured hull – this hard, indigestible hull must be removed before it can be used for human consumption. Hulling does not affect the nutrient value, as the germ stays intact through this process. Millet is highly nutritious, gluten-free and is not acid forming, so is soothing and easy to digest. It is a good source of protein and contains high amounts of fibre, B-complex vitamins, including niacin, thiamin and riboflavin and essential amino acids methionine lecithin and some vitamin E. It is particularly high in iron, magnesium, phosphorous and potassium. Millet is also rich in phytochemicals, including phytic acid, which is believed to lower cholesterol and Phytate, which is associated with reduced cancer risk. The botanical name for licorice actually means sweet root and is the key to the remarkable taste and medicinal properties of licorice. A coffee bean is a seed of the coffee plant and the source for coffee. It is the pit inside the red or purple fruit often referred to as a cherry. Just like ordinary cherries, the coffee fruit is also a so-called stone fruit. Even though the coffee beans are seeds, they are referred to as “beans” because of their resemblance to true beans. The fruits – coffee cherries or coffee berries – most commonly contain two stones with their flat sides together. A small percentage of cherries contain a single seed, instead of the usual two. This is called a “peaberry”. The peaberry occurs only between 10 and 15% of the time, and it is a fairly common belief that they have more flavour than normal coffee beans. Like Brazil nuts and white rice, coffee beans consist mostly of endosperm.
