Symons Organic – Organic Cheese Parmesan Shredded

Insprired by the great Italian grana cheese, our objective is to create an Australian parmesan that is up there with the best. Cheese maker Steve Interlandia learnt how to make traditional parmesan from his father John who was plying his craft as far back as 1958.

The cream is separated from our locally sourced organic milk and churned into butter at the factory in Camperdown, Western Victoria. The organic cows that supply the delicious milk are free to graze on lush pastures all day, all year round. Grass-fed butter contains five times more conjugated linoleic acid (CLA) than butter from grain-fed cows (J Dairy Sci. 1999 Oct;82(10):2146-56).

$13.25In response to consumer demand we launched organic mozzarella from our Mortlake factory in May 2021. To ensure we stayed true to its Italian heritage we enlisted the help of Fabio who has 35 years experience making mozzarella and previously made the only Australian organic mozzarella which was discontinued a few years ago. This cheese-making skill combined with the rich biodynamic/organic milk from our farmers in Western Victoria, has produced a traditional mozzarella ball which is soft, delicate and most importantly stretchy with subtle flavour and a creamy texture.

$14.50It is a “bitey and strong’ combination of our most matured organic cheeses in a texture similar to Mersey Valley without the additives. It is perfect compliment to our organic vintage cheddar on a cheese platter. This cheese should compete strongly to the other Organic Ploughmans cheese on the market which is more like a fetta cheese than a cheese associated with a Ploughmans Lunch.
