Ceres Organics – Tapioca Organic Flour

TAPIOCA is a slightly sweet, fine flour high in starch. It’s commonly used as a thickening agent in cooking, or to make fruit fillings and desserts. If mixed with other flours, it can also be used in baking.

Dayle and Terri Lloyd with son, Campbell and wife Ashlyn are fourth and fifth generation farmers.
The Lloyd family have a strong commitment to heirloom grain varieties for their suitability to the biodynamic farming method and flavour. Growing crops of wheat, barley, rye, and oats annually over 1,400 acres of their 6,000 acre farm, they also have their own flourmill for flour production.
The range of products grown and made at Eden Valley are Naked Barley, Semolina, Atta Flour, Premium Baker’s Flour, Wholemeal Flour, Rye Flour, Plain Cake & Biscuit Flour, Self Raising Flour and Poultry Layer Kibble, which is also supplemented with grain from other local Demeter farmers, Weir and Frost. Feed grains and bran from the flourmill are used to process into pelletised stock-feeds for poultry, sheep and cattle – nothing goes to waste.
Atta Flour
Also known as ‘light wholemeal’ or ‘sifted wheat’ flour. This is made from Australian ‘heritage’ heirloom hard wheat, varieties exclusively from Eden Valley, and has been sifted around 15% of the coarsest bran and germ. It has a bit more nutrition and flavour and is a little denser in texture, can be used as per ‘Bakers’ flour.
Four Leaf – Organic Chickpea Flour

Chickpea flour is referred to as the “power flour” and is one of the most nutrient rich gluten free flours available, packed full of healthy proteins, fibre and vitamins. Also known gram flour, garbanzo flour or besan flour it has been used for centuries in regions of Europe where it’s fried or roasted for snacks and also India where it is used for endless applications in the kitchen.
Four Leaf – Organic Millet Flour
$88.33Millet seed – is enclosed in a coloured hull – this hard, indigestible hull must be removed before it can be used for human consumption. Hulling does not affect the nutrient value, as the germ stays intact through this process. Millet is highly nutritious, gluten-free and is not acid forming, so is soothing and easy to digest. It is a good source of protein and contains high amounts of fibre, B-complex vitamins, including niacin, thiamin and riboflavin and essential amino acids methionine lecithin and some vitamin E. It is particularly high in iron, magnesium, phosphorous and potassium. Millet is also rich in phytochemicals, including phytic acid, which is believed to lower cholesterol and Phytate, which is associated with reduced cancer risk. Finely ground hulled millet, suitable for millet bread and gluten-free recipes.
