Ceres Organics – Wholemeal Stoneground Organic Flour

The Lloyd family have a strong commitment to heirloom grain varieties for their suitability to the biodynamic farming method and flavour. Growing crops of wheat, barley, rye, and oats annually over 1,400 acres of their 6,000 acre farm, they also have their own flourmill for flour production.
The range of products grown and made at Eden Valley are Naked Barley, Semolina, Atta Flour, Premium Baker’s Flour, Wholemeal Flour, Rye Flour, Plain Cake & Biscuit Flour, Self Raising Flour and Poultry Layer Kibble, which is also supplemented with grain from other local Demeter farmers, Weir and Frost. Feed grains and bran from the flourmill are used to process into pelletised stock-feeds for poultry, sheep and cattle – nothing goes to waste.

A delicate, stoneground unbleached white flour made from a special ‘soft’ (low protein) wheat variety grown at Eden Valley.

Wholemeal Flour
Also known as ‘wholegrain’ flour. This is a stoneground wheat flour made from 100% ‘heritage’ heirloom hard wheat grain, retaining all the nutrients and flavour found in the bran and germ. Similar use to ‘Bakers’ flour but giving a much denser and chewier texture.

This naturally white, unbleached flour is the same special ‘soft’ wheat cake and biscuit flour, combined with aluminium-free raising agents (not certified).
Four Leaf – Organic 100% Whole Wheat Flour
$31.25Also known as high protein flour or stoneground wholemeal bread flour. Our 100% wholewheat flour has the full flavour of the whole grain and gives the consumer the benefit of the full range of vitamins and minerals contained in the grain. It contains 100% of the whole wheat grain, including the bran and germ – nothing is removed. It is excellent for hand bread making and heavier cakes like a fruitcake.
Four Leaf – Organic 85% Light Flour
$11.25 – $38.33Also known as bran reduced wholewheat flour, atta flour or unbleached flour. Derived from the 100% wholewheat flour, about half the bran is removed leaving approximately 85% of the original whole grain. This makes a finer textured dough and is suitable for lighter cakes, pastries, pasta, biscuits, pancakes. It is fantastic for making bread in bread machines – just use the wholemeal recipe that came with your machine.
